Chicken with harissa & tomatoes

Ingredients Needed:

Ingredient Description
4 skinless chicken breasts Fresh, boneless chicken breasts.
2 tsp harissa A North African chili paste with a rich, spicy flavor. Recommended: Belazu's rose harissa.
1 tsp olive oil For rubbing on the chicken and roasting.
1 tsp dried oregano For seasoning the chicken with a hint of herby flavor.
250g pack cherry tomatoes Small, sweet tomatoes that roast beautifully.
Handful of olives Kalamata olives add a salty, briny touch to the dish.

How to Make Harissa Chicken:

Step Description
Step 1: Preheat and Prepare Heat the oven to 200°C (fan 180°C/gas 6). Put the chicken breasts in a roasting tray and rub with harissa, olive oil, and oregano.
Step 2: Roast Cover with foil and roast for 5 minutes. Then remove the foil, add cherry tomatoes and olives to the tray, and roast for another 10 minutes until the tomatoes start to split and the chicken is cooked through.
Step 3: Serve Serve with boiled new potatoes for a complete meal.
