Curried cashew dip

Ingredients Needed:

Ingredient Description
Cashew nuts 100g of cashew nuts, the base of the dip.
Limes 1-2 limes, juiced (about 50ml) for a zesty flavor.
Coconut cream 3 tbsp of coconut cream to provide a rich, creamy texture.
Korma curry paste 2 tbsp of korma curry paste for a flavorful base.
Bombay spice mix 2 tbsp of Bombay spice mix to finish off the flavor.

Serve With:

Side Items Description
Carrot sticks For a crunchy, healthy snack.
Cucumber For a refreshing, cool bite.
Naan bread To scoop up the dip and add a warm, soft contrast.

Method:

Step Description
Step 1 Tip all the ingredients (except the Bombay spice mix) into a food processor. Blend until smooth, then season to taste. If the mixture is too thick, add a little more lime juice or a splash of cold water.
Step 2 Spoon the dip into a bowl and sprinkle over the Bombay spice mix before serving with carrot sticks, cucumber, and naan bread.
